So you got a few gallons of milk for 50% off at the grocery store, but they are about to expire, right? There's nothing worse than stocking up on something in order to save money, only to end up throwing it away after it's gone bad. Here are some things you can do with that soon-to-be-expired-milk:
1. Make pancakes. Depending on your recipe, a single batch will use 1-2 cups of milk. And the nice thing about this is that you can make them up quickly, and they store well. Stick them in the freezer and you've got pancakes you can grab and heat up at a moment's notice.
2. Whip up a batch of hot chocolate on the stove. It's still fairly cold in most parts of the country right now, so a nice batch of hot chocolate will warm you up and make use of that milk. Mix 2 quarts of milk with 4 TB of raw cacao, and 4 TB of raw sugar, and you have a nice way to enjoy a few blissful moments.
3. Culture up some yogurt in the kitchen. All you really need is some milk and yogurt, and you could easily be using up a half a gallon of milk or more all while saving money on a healthier yogurt option. Here's a great crock pot yogurt recipe here.
4. Blend up some smoothies. If you've got some banana, nut butter, some other fruit, and a little bit of spinach, then you've got a great combination to go with that milk. Of course, there are so many options when it comes to smoothies, but that's one of my favorites.
5. Throw together some of your favorite muffins. Nothing's more fun than a batch of muffins for breakfast. Well, there probably are things that are more fun, but these sure are tasty and a fun way to use up some milk. See our recipe below.
6. If all else fails, freeze it. Milk actually freezes very nicely and can then be used later for baking. Freezing tends to make the fat separate from the milk once it's thawed, so stick with just using frozen milk in your cooking vs. on your cereal.

Bonus: Basic Whole Grain Muffin Recipe
Servings: 12 muffins
Prep time: 10 minutes
Cooking time: 15 minutes
- 1 cup of sugar (raw cane sugar is ideal)
- 1 egg
- 2 cups whole grain white flour
- 2 teaspoons baking powder
- 1 cup milk
- 4 tablespoons softened butter or coconut oil
- 2 1/2 tsp vanilla extract
- Preheat oven to 375.
- With a mixer, whip up the sugar and egg until well-blended.
- In a separate bowl, combine the flour and baking powder.
- Slowly alternate adding the flour/baking powder mixture and milk to the egg/sugar mixture until everything is mixed well.
- Add in your butter/coconut oil and vanilla, and finish mixing until everything is well blended.
- Pour batter into greased muffin pan or muffin cups.
- Bake for 15-20 minutes, or until a toothpick comes out clean when inserted.
This is just a basic recipe, so you could spruce it up and make it your own by adding things like sliced apples and cinnamon, chocolate chips, or blueberries.
